Thai Chicken Lettuce Wraps with Spicy Peanut Sauce

    Thai Meatball Lettuce Cups With Spicy Sweet Peanut Sauce
    for dinner this evening. I'd bought Boston Lettuce but used it all up in salads and was in a small grocery store yesterday but they didn't have it so I bought Leaf lettuce instead. So mine don't look anywhere near as pretty as Luisa's but oh my they were delicious!

    I just bought ground pork and ground chicken. I ended up with 39 meatballs. We ate 9 for dinner and I froze the remaining 30 to serve up for lunch when we have visitors later on this month.

    I wasn't sure how much rice wine vinegar to add to the sauce so I added 1 tbsp. I added 1 tsp. of sugar, I subbed Sriracha for the garlic chili paste, and I used about 3/4 cup of hot water., I ended up warming it up in a saucepan on the stove as I do that with the peanut sauce that I usually make. I find it just helps all the ingredients meld better.

    I cut my cucumber in to sticks and afterwards see that Luisa does hers in slices. The mint and cilantro are lovely. I used up some pickled carrots I had in the fridge.

    This was fun to make. I'll totally make them again. Thanks Luisa for a great recipe.

    They look fantastic! Great pictures Janet! I'm lazy and would probably make them "loose" and just spoon the meat mix into a lettuce cup and top with the fixings but balls would be much better especially if serving guests.

    I like the meatballs Linda because they`re neater when you eat them. :) If I just had the meat loose it`d be all over my shirt for sure! :) You know Michelle, I don`t think I`ve ever tried almond butter but I`m sure it would work just fine. Thanks guys!

    Hi, Chuckieb! I missed this the other day. Those look delicious! Nice photos. I really like Luisa's recipes. There is always something refreshing about her recipes. Using a meatball is a cleaver idea. Much easier to eat and handle.
