Thai Meatball Lettuce Cups with Spicy Sweet Peanut Sauce

- For Meatballs: shopping list
- 1 large shallots, peeled shopping list
- ¼ cup fresh mint or cilantro (or both) shopping list
- 2 green onions shopping list
- 1 inch piece ginger, peeled shopping list
- 1 jalapeno or red chili (or serrano) shopping list
- 1 carrot, peeled and shredded shopping list
- 2 tbsp soy sauce (or fish sauce) shopping list
- 2 tbs granulated sugar shopping list
- 2 tbs canola oil shopping list
- 2 tbs cornstarch shopping list
- 1 tsp coarse salt shopping list
- 1 lb ground pork (Niman Ranch pork chops) shopping list
- 1 lb ground chicken (organic chicken breasts) shopping list

- For Sauce: shopping list
- 1 cup all natural, smooth peanut butter shopping list
- fresh lime juice, 1-2 limes shopping list
- rice wine vinegar, to taste shopping list
- ¼ cup soy sauce (or fish sauce) shopping list
- granulated sugar, to taste shopping list
- garlic chili paste, to taste (such as sambal olek) shopping list
- hot water, to thin as desired shopping list

- For serving: shopping list
- 2 heads butter lettuce, more of the inner leaves, separated shopping list
- large cucumber, thinly sliced shopping list
- julienned carrots shopping list
- fresh mint (or cilantro) sprigs shopping list
How to make it
- Preheat oven to 400 degrees F.
- Combine all ingredients except meats in a food processor and pulse until minced. Transfer to a large bowl and add meats; use your hands to thoroughly combine (just add a little more cornstarch if it's still too "wet").
- Form meatballs, using 1 rounded tablespoon each, and place on parchment-lined baking sheets 1 inch apart. Bake 15-20 minutes, or until golden brown and cooked through.
- Meanwhile, make sauce by combining all ingredients in a medium bowl. Transfer to serving dish.
- Serve meatballs in lettuce cups with cucumber, carrots, mint and a drizzle of sauce(or you can set up all the components and let guests assemble their own)
