Tropical Grilled Mango & Shrimp Skewers

    *Made for the May 2019 "tropical" Recipe Challenge*

    I would give this a solid 4 stars. I think the shrimp needed a little something more. I did not have the Birdseye chili's so I used jalapeno. I think if the marinade had been blended with the jalapeno you could taste it more, I didn't get any spicy at all from it. I cut the marinade in half and it was a good amount. I would have even set some aside to baste with if I'd had thought about it! Loved the grilled mango pieces, so good!

    Nice photo, Mommyluvs2cook! Too bad it didn't have the spice you were hoping for. That's not a very long marinade time. From the ingredient list, it looks like it has a lot of citrus flavor.

    Lovely photo, I love the colours! I don't think I've had grilled mango before, it sounds great! I wonder if some garlic or black pepper etc would have helped the flavour?

    Thanks y'all! It does have a lot of citrus in the marinade, so the shrimp are slightly tart DIZ. Yes, garlic would have been a great addition Shona, and maybe some smoked paprika or chili powder?

    Great photo Michelle! Please add it to the recipe too. The marinade time is very short, maybe marinating a little longer would give them more 'zip'? I like you idea of making extra and basting.
