Use Your Leftover Eggnog for Muffins!

    Made this from Pumpkinberry for the January 2017 Recipe Challenge: Use Your Leftover Eggnog For Muffins

    I was so excited that muffins were chosen for this month's recipe challenge and really wanted to make a muffin recipe from a group member here, but then this recipe using leftover eggnog caught my eye and I thought it would be a good way to use up what I had left. To say I was very disappointed with the result is an understatement. See my review for the result. I hesitated about giving even the one star rating, but thought I had to leave something. I hope to have time to make another muffin recipe before the end of the month :(

    I read your review and the recipe, Bakerme. Too bad they didn't turn out for you! I have cooked with lactose-free milk before and it never seemed to make any difference to me. The recipe states two teaspoons of baking soda and that seems too much to me. Normally muffins only require one teaspoon of baking soda or baking powder.

    Good4U, my husband is lactose-intolerant and I use Lactaid milk in all of my cooking and baking whenever milk is called for. It works great and, like you, we don't taste a difference at all, so I don't think the Lactaid eggnogg was the problem here. Using a full 1 Tablespoon of baking powder *plus* 2 tsps. baking soda may have been just way too much leavening. I hate having wasted the ingredients :p

    Angel, I checked out the link and it looks like Saralynnpaige is a professional photographer. I couldn't find any recipes on her site, so am not sure if it's the same person as Pumpkinberry, although Pumpkinberry's profile page here says she's a photographer.

    Oh wow, I'm so sorry these didn't work out for you Bakerme! Like the others said, too much baking soda IMO!! I know what using too much baking soda taste like, once I accidentally used baking soda in a recipe that called for baking powder, and it was not good :\

    Been there. Done that. The soda also helps the baked goods brown up much more.
    I have a recipe bookmarked for making pudding from any left over eggnog. That might hold the flavor better. I'm sorry the recipe didn't work out. I hate ingredient waste.

    Me, too, Points. I want the recipe to work right the first time out of the box. I don't mind making minor tweaks in subsequent tries to get it to best suit our taste, but I just hate throwing the whole thing in the garbage, which is what I did with these muffins.
