Warm Brussels Sprouts Salad

    *Made for the January 2021 "Healthy" Recipe Challenge*

    This made a perfect light lunch for me! I tried to shave the sprouts in my food processor with the slicing disc but I think I had it set too thin, because they were basically just shredded by the time I was done. I knew I should have done it by hand! Regardless it was so good. Tangy front the vinegar and mustard. I didn't have apple balsamic so I just used regular and I had to use lemon zest instead of orange. I have leftovers in the fridge and will probably eat it cold out of the fridge for lunch today :)

    I've never heard of apple balsamic vinegar before. It sounds good, but I bet any balsamic would be good in this. Warm or cold, it sounds tasty! :)
