Warm Brussels Sprouts Salad With Apple Balsamic & Toasted Walnuts

- Vinaigrette: shopping list
- 1 teaspoon Dijon mustard shopping list
- 1/2 cup apple balsamic vinegar (or regular) shopping list
- sugar, salt and pepper - to taste shopping list
- 1/4 cup extra virgin olive oil shopping list
- 1 tablespoon finely chopped shallots shopping list
- 1 tablespoon fresh orange zest shopping list
- For salad: shopping list
- brussel sprouts, shaved thinly by hand, small mandoline or food processor (about 4 cups) shopping list
- kosher salt & fresh ground black pepper shopping list
- extra virgin olive oil, for sauteing shopping list
- 1 cup toasted walnut halves, slightly broken up shopping list
- 1 cup shaved parmesan cheese shopping list
How to make it
- Whisk all vinaigrette together (in order) in a bowl. Set aside.
- In a large nonstick saute pan over med-high heat, a enough olive oil to coat the pan. Add brussels sprouts and saute until the sprouts start to wilt a little and start to caramelize. Take off heat and toss in the vinaigrette and walnuts.
- Transfer into a salad bowl and let slighty cool. Top with shaved parmesan and serve warm or room temp.
