Weiner Schnitzel

    I have made Veal Scallopini numerous times and also Chicken Schnitzel, but never Pork Schnitzel, and I love Pork Schnitzel! I order it a lot in restaurants. So last night I decided to give it a whirl and I used Joce's recipe.
    Wiener Schnitzel My Way
    When I have it in restaurants I always like a mushroom sauce over it, so I found a recipe online
    to go with it, but am afraid I didn't like the gravy.
    However....we loved the Weiner Schnitzel! I didn't measure out the flour or breadcrumbs, just eyeballed it, but apart from that I followed the recipe as was written. I'd never done a double dredging before and I do think it made it nicer. I was mashing potatoes and tending to the gravy while finishing off the Schnitzel so I left it on just a few minutes too long. It was fine, but wasn't quite as juicy as it could have been if I'd been paying closer attention.
    I loved the schnitzel with the lemon squirted over it.
    This is a good recipe, and I shall use it again, but next time look for a better gravy recipe. :)

    It looks fantastic, Janet. Thanks for the lovely review) I very pleased you liked it. I should mention in the recipe that to save time and mess, I now do everything in plastic bags. It seems to coat everything better that way.
