    Whipped Scotch Cookies by Eastcoaster

    I make these every Christmas and love them! Like Mrs.J's review, this same recipe has been in my family for over 50 years. My Mom still makes them every Christmas, for as far back as I can remember, and her Mother made them as well. I believe the original recipe came from the back of a cornstarch box, the brand "Canada Cornstarch". But I've never been able to date the origin.
    This time around I thought I'd be a little different and add some almond extract instead of vanilla. I added a tad more flour to make the dough slightly stiffer and rolled them into tiny balls and topped with half a glacé cherry. I usually make them bigger and flatten them a little, but didn't flatten this time as I made them so small. They only took 15minutes in my oven (rather than 25 minutes). My Mom usually presses them down with a fork first then adds a cherry. Or if she doesn't have cherries she'll sprinkle on some sugar.
    If you're making these for the first time, just note that some people find them chalky, or even a little bland. These really are the type of cookie that *have* to age. At least 3-5 days before eating them but a week is better. The longer they sit the less cornstarchy they taste and they get more buttery and melt in your mouth. Yum!
