How to make it

  • preheat the oven to 325°
  • Cream the butter, add the rest of the ingredients and beat until fluffy
  • It does come together just takes a couple of minutes
  • Drop from teaspoons onto greased cookie sheet or parchment paper
  • Press a bit of green or red cherry on top.
  • Bake in a 325degree oven for 25 minutes or until lightly browned.
  • If you're using cherries drain them on a paper towel or tea towel so they are not so wet.

  • I am lactose intolerant so I use Becel lactose free gluten-free vegan margarine, or Earth balance lactose, soy, and gluten-free spread when I make these, no one seems to know the difference. Of course butter is better. They freeze well but if you're like me you'll eat them right out of the freezer.

    This "Whipped Scotch Cookies" recipe is "the recipe" for shortbread in my family. My grandmother was making it before I was born, and my mother has been making it as long as I remember (50 years). I needed a dairy-free gluten-free version of this cookie for our Christmas get together since we have food intolerances. I am not done experimenting, but thought I would post my results so far. I used BOB'S RED MILL GLUTEN-FREE FLOUR (both batches) and (i) BECEL VEGAN MARGARINE (first batch) and (ii) EARTH BALANCE ORIGINAL BAKING STICK (second batch). With the gluten-free flour, the BECEL VEGAN MARGARINE made a nice light crispy cookie with a reasonably pleasant flavour; and to my surprise the EARTH BALANCE ORIGINAL BAKING STICK trial failed (flat fragile cookie falling apart, and not quite as delicious). I still need to work on this recipe since the gluten-free version does not have the "nostalgia exact replicate" factor of the regular gluten-containing recipe I had been eating all my life (slightly different texture: not good or bad, just different). I will try working with other gluten-free flours, and perhaps substitute arrowroot (1:1 sub) for cornstarch since we also have one corn allergy in my family. I will also try other recipes for dairy-free gluten-free shortbread. Thanks Manella for posting this recipe online.

    Nov 27/16 This is a fantastic cookie recipe. It came together exactly how the instructions said it would. I like another review can taste why so many loved this recipe. Will be making again.

    I remember these being the rave on AR and now I know why. They do melt in your mouth! Made just for those that appreciate a good not-so-sweet butter cookie. My hubby can’t stay out of them. They reminded me of spritz cookies, but dropping them onto the cookie sheet instead of trying to run the dough through a press makes these much more appealing. I used candied cherries on most, but couldn’t resist the temptation of sprinkling a few with colored sugar. ‘Tis the season.
