Whipped Scotch Cookies

- 1 pound butter room temperature shopping list
- 1 cup icing sugar, also called confectioners sugar shopping list
- 1/2 cup cornstarch shopping list
- 3 cups all purpose flour shopping list
- 1 teaspoon vanilla shopping list
- 1/2 teaspoon salt shopping list
- Cherries the kind you get in a jar, optional shopping list
How to make it
- preheat the oven to 325°
- Cream the butter, add the rest of the ingredients and beat until fluffy
- It does come together just takes a couple of minutes
- Drop from teaspoons onto greased cookie sheet or parchment paper
- Press a bit of green or red cherry on top.
- Bake in a 325degree oven for 25 minutes or until lightly browned.
- If you're using cherries drain them on a paper towel or tea towel so they are not so wet.

- I am lactose intolerant so I use Becel lactose free gluten-free vegan margarine, or Earth balance lactose, soy, and gluten-free spread when I make these, no one seems to know the difference. Of course butter is better. They freeze well but if you're like me you'll eat them right out of the freezer.
