White Bean Chicken Chili

    ~Made for January 2020's "Beans and Legumes" Recipe Challenge~

    White Bean Chicken Chili by DetroitTokyo

    This is absolutely delicious!! It smelled so good just after mixing the ingredients in the pot, and even better while cooking!
    I used the Crock Pot, and cooked it on high for two hours and low for two more hours and it was perfect. ( I did sauté the onions and garlic with spices before adding to the slow cooker). I poached the chicken the night before, and cubed it up when it was cold and added it half way through cooking the chili. If I thought about it then, I would have shredded it when it was warm the night before, the shredded chicken would have given it more body. But it still tasted good!
    My cans of beans were 18oz instead of the 15oz ones called for, so I didn't add the chickpeas as that would have been an extra 9oz's of beans in the recipe. So, instead I added a cup of frozen corn near the end of cooking to make up for the missing chickpeas.
    The seasonings were perfect in this! We especially loved the Cilantro Cream with it! It was exceptionally delicious and I will use that for other types of chili too!
    The whole family loved it, and they aren't big bean eaters. Even my son who doesn't like sour cream loved the Cilantro Cream! So this is a winner recipe that I will make again and again! :)

    This is a neat recipe. The broth looks a little watery though, was it Shona? Cool on the Cilantro sour cream. I just read that today is National Bean Day so you're very timely. :)

    Janet, I noticed that too when I loaded the pictures. I think it's because I took that photo when it was only in the Crockpot for 3hrs ( I wanted to capture the light before dark). It definitely thickened up more! I had leftovers for lunch today and you could stand a fork up in it. If I took a picture of the leftovers it would of been a more accurate representation but I was worried that there might not be any leftovers last night! ;) How cool on National Bean day! :D

    Lol, I think this was the first time I did that? I usually like to take pic's of leftovers in the morning/afternoon sun. But with everyone coming back for seconds I was worried there wouldn't be any leftover! Testament to a great recipe! ;)
