Zucchini Orzo

    *Made for the March 2020 "Spring" Recipe Challenge*

    I haven't had orzo in forever and I forgot how much I liked it! I didn't have vegetable stock so I used chicken. I am so glad I pulled up some of my fresh herbs from my old house and replanted them at my new :) I think this would work with all kinds of cheeses, maybe parmesan or even feta? Such a delicious lunch :) Thanks Janet!

    I'm not a big fan of orzo, but I could probably make this with rice perhaps? I love all pasta, except orzo for some reason...probably because it's slippery little grains and I like pasta or rice to have a bit of chew to it?? I can't really explain it, but I'd rather eat rice than orzo! ;) ;)
