How to make it

  • Bring 3 cups of vegetable broth to a boil and add the pasta. Cook until done. Use a cheese grater or food processor to shred the zucchini. Saute briefly with chopped onion and garlic until lightly golden.
  • Add herbs to the zucchini mixture, stir thoroughly, and then remove mixture from heat.
  • Combine with cheese ,cooked orzo, tomatoes and fresh ground pepper and serve cool or at room temperature for a salad or bake in 350F oven for 30-45 minutes for a main dish.

    What are the beans shown in the photo? Oh just ignore me... duh.. .those are the cherry tomatos. :) Looks a lovely side dish. I prefer these salads warm also but you are right it would make a good summer salad because it wouldn't spoil in the sun.

    LOVE orzo...I have a bunch of recipes using it... and one not too different from this. :) A friend made it for lunch a lot when I first added it...he was addicted. :) It's a great combo. Might have to try it baked.
