Antipasta Salad

    Recipe by Keni: Antipasta Salad
    It's all good!
    Nice zippy flavor and wonderful chilled.
    I don't want to like it because of all the oil but it's too good.
    Used sun-dried tomatoes packed in oil and used the oil in the recipe to keep from making such a dent in my pantry oil.
    Fresh basil shines through.
    Used Kalamata olives for the Greek flair.
    Minced up a few strips of lemon peel to help the juice along.
    Couldn't even tell there was any red pepper flakes in the dish at a quarter teaspoon.
    A nice recipe I wouldn't mind making again.
