Beet Carpaccio

    First off Lillian...Thoughts are with you and your Mom. Take care and I hope things go as well as they possibly can.
    This recipe is by a new member to Group Recipes "Popartichoke" and if this is any indication then I'm totally going to be watching what he puts out next. This was A-One Incredible!
    Chioggia Beet Carpaccio
    I did not have the Chioggia Beets, but just used local ones. I chopped my red onion up instead of slicing it as I felt it would be easier to eat that way. The fresh tarragon was awesome....very licoricy. I used light sour cream and I actually had the white pepper although it would have been fine with black I'm sure.
    I did not have any 'microgreens' but I did have some red leaf lettuce that had picked fresh that morning and I just cut it up very finely and sprinkled it over at the end. The pistachios were a great addition. My rendition doesn't look anywhere as nice as Popartichokes but the flavour combos were amazing and I'll totally make it again.
    This recipe knocked our socks off and I'd give it a 10/10. A must try! SSSoooooooo Good! Thanks Popartichoke and keep 'im coming!
