    Blueberry Banana Bread

    I had my doubts on this recipe the way the batter turned out. It did surprise me. Rose nicely. Good flavor. Gave it an extra 15 minutes in the oven but might have been good to go at an hours bake time.

    Mothers favorite three ingredients; blueberries, bananas, and pecans.

    I think so. Make sure you let them set out at room temperature so they will wine real good then stir, good for flavor. It's the only way to get liquid out of a banana, cause you sure can't get any juice running fresh bananas through a juicer.

    You were right Points...it was very good! And the old, frozen, bananas worked fine! The 1 hour baking time worked out fine for me. = P

    Points...I added my photo...which looked a little different from the feature photo because mine wasn't sliced! ;)

    Oh yes...I have lots of stuff thats been in my freezer for 2 years, like crushed pineapples, shredded apples, bacon fat, beef drippings, peach juice and lemon and orange peel. I hate to throw them out because you never know when you might need them! They have come in very handy at times!

    Oh, BTW...you WERE right about the baking time for the bread! I just ate the very center piece and it was a little TOO moist...lol! The dark color of the bread fooled me...I thought it was thoroughly baked! I'll have to go back and edit my review on the recipe.
