Buckwheat and Lentil Salad

    I made this for dinner tonight... it's sensational! I really love the combination of herbs and spices, and the addition of a little vinegar and olive oil at the end is just genius. I made it with French Puy lentils, and added some zucchini, red and yellow peppers, parsley and mushrooms - what I had. When I have some tomorrow I'll add some tomatoes. Use stock for more flavour. This is healthy and very tasty... the lentils and buckwheat combined with the vegetables give a filling, low-GI dish, keeping blood sugar stable and staving off hunger! Good for a diabetic diet or just anyone trying to eat healthy.
