  Instead of the rotel tomatoes cause I didn't have them, I used 2 romas along with a diced poblano that I had hanging around the fridge. Put this in a spinach burrito size tortilla and topped with cheese and a quick gaucamole, plus the sour cream. Very good! Cut back on the cayenne for the kids...

  I actually only used the rice, beans, olives and toppings. Cooked the rice separate so I could do that. Everyone else loved the original version. Just threw the cooked rice into the pan for them!
