These are the fastest, easiest cookies I ever made! Its just 1 box of cake mix, 1/2 cup corn oil and 2 eggs! Thats all I used! I baked them for 8 minutes! And if you eat them warm, they literally MELT in your mouth with the first bite! I made mine with devils food cake mix and I added some grated coconut to the mix! I know I'll be making these alot in lots of different flavors...with lots of different add-ins!

I think I'll also try to make a low fat version by using applesauce instead of oil. This is a MUST TRY recipe!

I make these all the time. I buy the cake mixes when they are on sale for $1. its a quick thing when the kids bring friends home after school and you always have the ingredients. sometimes I roll the dough in those little hard round sprinkles before baking. or even add chocolate chips.

Thats a great idea Laurie! When I see the cake mixes on sale I'll have to get lots of them in different flavors! Its so much less exspensive that buying the brand name cookies! These taste very similar to the Archway brand...which cost a small fortune for about 8 cookies!

yup, these are the only thing I use cake mixes for ;) I have a few varieties posted, too, just to see if they'd work. ;) Crinkles which use cream cheese, peanut butter ones, pumpkin pie ones, and strawberry shortcake ones...I think that's all I've done.

They look great Keni! But I would have to omit the chocolate chips because my daughters not a chip fan. I would probably omit the cream cheese too... do you think this would work with just fresh strawberries? I would still be using the oil, eggs and cake mix, of course.

sure, it would work... I used the cream cheese and white chocolate to give it a "creamy" feel, like the whipped cream part of a shortcake :) It would work without either, though.
