Chef Meow's Almond Mushroom Pate

    I was faithful to the intent of the recipe but I strayed a bit on ingredients. I must say that when this was first mixed I was not pleased with the flavor and almost pitched it. I decided to let it sit up and that was exactly what it needed. The flavor really came through. I added a bit of fresh ginger root in mine and used baby portabello mushrooms. The ginger really gave a fresh, subtle after taste.

    List of what went in mine.
    1 small carton of baby portabello mushrooms
    1 leek
    1/2 cup canned navy beans
    1 egg
    1 tbsp olive oil
    3 cloves of garlic
    1 tbsp minced fresh ginger root
    1 tsp dried mint
    1 tsp dried tarragon
    1 tablespoon fresh lemon juice
    2 teaspoons soy sauce
    1/8 teaspoon white pepper

    I certainly did. I'm already trying to dream up something to use it on as a spread. I'll come up with something. But it was really a lovely light spread on triscuits.
