Chilled Cucumber Soup

    I am ordinarily not a fan of cucumber, or cold soups for that matter. However I saw this recipe at merlin's page and I just had to try it! It is lovely. The presence of leeks, onion and shallots, mint and dill balance the flavour of the cucumber. As usual I had to adapt it for dairy free needs, but I suspect this would taste even better with full dairy content!! This could also be adapted as a vegetarian soup by subbing the chicken stock with a veg one. (This soup actually works hot as well, for a overcast rainy summer day).
