A very sophisticated cold soup English cucumbers and leeks flavored with chives, mint and dill. (Just to let my new cooking friends know I have a softer, gentler, more vegetative side!)

This sounds interestingly yummy... is it actually sweet or salty? I'm guessing sweet from the condensed milk... but I cannot seem to imagine the flavor... maybe next summer I'll be brave enough to try this ^_^ saving it!

This soup is savory, and depending on the Tabasco can be spicy to taste. It is very refreshing, too. Make sure you use English cucs as the regular ones make it too watery.

I love this recipe. I'd need to adapt it slightly for my boring non-dairy needs but I'm sure this would work for me! I don't normally have a lot of time for cucumber but I think I could grow to love them with this recipe. Thank Merlin!

This soup is lovely! I am not usually a fan of cucumber, or cold soups for that matter, but I am now converted! The flavour of leeks, onion and shallots, mint and dill balance the flavour of the cucumber. As usual I had to adapt it for my dairy free needs, but I suspect this would taste even better with full dairy content!! This could also be adapted as a vegetarian soup by subbing the chicken stock with a veg one. (This soup actually works hot as well, for a overcast rainy summer day).
