  I made a good approximation of the recipe. Thought I had 4 eggs left in the fridge. But mother popped up early this morning and made some cornbread muffins, using two of the eggs.
  
  I added a half teaspoon each of baking soda and powder to try to make up for the missing two eggs.
  
  Not sure if I was supposed to stir the batter after poring it over the apples so I did not. With 8 T of butter in the sauted apples, they did a splitting maneuver away from the batter wherever it was poured. So the apples mostly ended up around the edge of the dish.
  
  I'll get to taste the pancake later on today. I'm sure mother can not Mikey the whole thing.
