    Recipe by Lunasea: Crispy Eggplant Fritters With Smoked Mozzarella
    A nice savory dish. I couldn't get a golden brown color and by the picture Lunasea had problems too. This recipe only made 15 fritters for me, but I have big fingers. It's a recipe that should be tried at least once.

    I did the eggplant with the skin on. Maybe it would lighten up the color if the eggplant was peeled. The skin does appear to be chewier than the meat.

    Yes, I always peel my eggplants, unless I'm stuffing them. I don't like to eat the skin. I think that would definitely lighten the color of the fritters.
