  tonight for dinner and I highly recommend it! It's super simple to make, comes together quickly and is a great variation on zucchini. I'd never thought to fix it grated as a side dish, but I'm so glad Tina told us all about it - I'm on the bandwagon now. This will be in "the rotation" for dinner often.
