Ingredients

How to make it

  • Prep the vegetables.
  • Heat oil and butter in saute pan.
  • Add shallot and garlic, cook about one minute over medium heat.
  • Add zucchini and stir to coat with butter/oil mixture.
  • Add seasonings.
  • Cook just enough to evaporate the moisture extracted from the zucchini.
  • Immediately remove from the heat and stir in sour cream and serve.

    I highly recommend this recipe! It's super simple to make, comes together quickly and is a great variation on zucchini. I'd never thought to fix it grated as a side dish, but I'm so glad Tina told us all about it - I'm on the bandwagon now. This will be in "the rotation" for dinner often.
