Fresh Mint Ice Cream

    A nice minted ice cream. Leaves the palate feeling cleansed. This would be good after a heavily flavored meal.
    Using the whipped white instead of the yolk of the egg tends to make the finished product chip and break more than curl up in an ice cream scoop to give that nice rounded look (see pic).
    The product takes less time to chill in the ice cream churner because of the whipped egg white.
    My first time using Creme Fraiche. I'll do a separate write up on that on another recipe. It lends a twang to the ice cream over regular heavy cream.
