Hunter-style Chicken / Chicken Cacciatore

    Recipe: Hunter Style Chicken Chicken Cacciatore

    I adore chicken cacciatore because of its versatility. It’s one of those “anything goes” type of dish. This recipe will not disappoint. It has a rich, flavorful tomato sauce unlike other recipes I’ve tried. BA has some amazing authentic Italian recipes and I really wanted to try this one because it starts with an anchovy base. Don’t let the anchovies scare you. You won’t even know they are there, but you would miss them if they weren’t. They really did dissolve and disappeared in the skillet. I was surprised! I kept adding more just for the excitement of watching them disintegrate. Other than using leg quarters instead of thighs, I followed the recipe exactly. Just for fun, I served over zucchini noodles that I made with my new spiralizer. So good!! Thank you, BuonAppetito for sharing!

    Oh WOW, another gorgeous photo, DIZ! I've made chicken parmesan, but never chicken cacciatore. It looks delicious and the zucchini noodles are a nice touch of color!

    I've never had chicken cacciatore before and I don't think I have had anchovies either! So, I guess they wouldn't scare me. ha It is a beautiful plate of food.

    I love, love, love chicken cacciatore! It was the first big dinner I ever made when I lived on my own, so it has special memories for me. I always make it with chicken quarters too. Yum!

    "Made this a few weeks ago and was HUGE hit. I was anxious about the anchovies but I'd heard that you can't really taste them in dishes, but adds a more complex salt component, so I tried it. Result was wonderful, couldn't taste them but the dish as whole was fabulous. I did add a half of green pepper I had in fridge. Served with tagliatelle pasta. Husband cleaned his plate to point of no traces of any food, ha. Big time winner here."

    Thank You, Everyone! I can't believe all of the "never" had chicken cacciatorie. It's so easy and everyone has their own version, most using simple ingredients. This one is more complex than most recipes. BA also classifies it as Hunter style, but for me a Hunter style has more vegetables like carrots, rutabagas, turnips, and peas.

    I checked out quite a few cacciatore recipes here and none of them had anchovies in them. I'm guessing that isn't a "traditional" ingredient.
