    Jims White Clam Sauce

    This is the second time I've made this recipe. It is consistent as rain. A very quick, but seemingly fancy dish that is traditionally served over Fettuccine. Today I served it over basmati rice and I might enjoy that even more because the rice seems to soak up the white wine butter so thoroughly.

    I had opened one can of chopped clams too many yesterday and wanted to find something perfect to do with the remainder. This is definitely it. It is a relatively inexpensive dish which can be the main dish for a party of six.

    Today I used reconstituted dried shitake mushrooms along with some chopped fresh basil. The basil I added in the first step to saute with the garlic, thyme and oregano. The green in the photo is the fresh parsley which is added in the last step.
