Jims White Clam Sauce

- 1 lb canned chopped clams shopping list
- 2 med cloves garlic, chopped shopping list
- 1 T oregano shopping list
- 1 tsp thyme shopping list
- 2 T flour shopping list
- 1/4 C butter shopping list
- white wine shopping list
- 1 C chopped parsley shopping list
- 1/2 lb sliced mushrooms shopping list
- 2 chopped green onions shopping list
- salt & pepper shopping list
How to make it
- Put Clams in a 2C measuring cup, pour off clam juice to the 1 C level, add wine to bring the liquid back up to 2 C
- Melt Butter in a large heavy pan
- Add Garlic, Thyme and Oregano, cook for 1-2 minutes and then add flour to make a paste
- Add Clams and liquid, stir into the paste
- Add Parsley, Mushrooms, and Green Onions
- Simmer for 10 minutes
- Add salt and pepper to taste
- Serve over pasta

I dashed out at lunch and picked up the stuff to make this. I also posted over on Livestrong.com so I could figure out how many calories (yup on a perpetual diet). I'll let you know how it turns out :)
