    Spicy Italian Potato Wedges

    I made these today for dinner. Overall very satisfactory but I will make an adjustment in the cooking instructions next time. I believe 375 and 40 minutes is required to get the potatoes really cooked up and crispy. Left mine in at 350 and 45 minutes and it was done but al dente and not crispy. I'll be trying them again because the concept is sound.

    Yes, that cooking time sounds to low and short. I usually cook potato wedges at 400* for about 45 minutes. I always use parchment paper to line the baking sheet. Much easier clean up that way.

    And don't forget to "Prehead" the oven! ;)
