These potato wedges are spectacular and put those store-bought frozen ones to shame. This recipe is quick and easy.

I've increased the oil just a bit, added more parm (addict, what can I say?), and tried them with a cajun spice mix, hot hot hot. I find I like to cook them a little hotter (400) and let the bottoms crisp up with the tops staying moist and tender, the mix only being placed on top. Now you got me off and running! LOL I'm up to 4X's making them.

I know. I do my "french fries" like this now too. They are good just plain with olive oil and salt and pepper too. I don't think they are much more trouble either!
