How to make it

  • Prehead your oven to 350F. Then clean your potatoes and cut them into thin slices (cut in half then each half should be cut into 6 wedges or so). Put your wedges in a bowl with the olive oil and toss until olive oil is on all the wedges. Then add in your oregeno chili flakes and salt and peper. Toss that up again. Pop those on a baking sheet then put them in the oven for 20 minutes. They should turn golden brown. Once this happens, take them out and flip them over and bake for another 10 minutes. Then you can sprinkle a little parmesan cheese if you like. Fin.

    Made these the other day for lunch. I read a few reviews and baked them at 425 degrees not the 350 it says. They came out somewhat crispy outside and tender inside. I have made fries like this many times just not with oregano or chili flakes.
    I had them with a poached egg.

    I made these today for dinner. Overall very satisfactory but I will make an adjustment in the cooking instructions next time. I believe 375 and 40 minutes is required to get the potatoes really cooked up and crispy. Left mine in at 350 and 45 minutes and it was done but al dente and not crispy. I'll be trying them again because the concept is sound.

    I just can't seem to get enough of these! I wish that fork rater would allow me to change my 4 to a five! These potatoes get better each time. Yummy

    I know. I do my "french fries" like this now too. They are good just plain with olive oil and salt and pepper too. I don't think they are much more trouble either!
