Spicy Italian Potato Wedges Recipe

These potato wedges are spectacular and put those store-bought frozen ones to shame. This recipe is quick and easy.

Ingredients
  • 2 tbsp olive oil
  • 4 medium-sized potatoes
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1/2 tsp hot chili flakes
  • 3 tbsp grated Parmesan

Directions
  1. Prehead your oven to 350F. Then clean your potatoes and cut them into thin slices (cut in half then each half should be cut into 6 wedges or so). Put your wedges in a bowl with the olive oil and toss until olive oil is on all the wedges. Then add in your oregeno chili flakes and salt and peper. Toss that up again. Pop those on a baking sheet then put them in the oven for 20 minutes. They should turn golden brown. Once this happens, take them out and flip them over and bake for another 10 minutes. Then you can sprinkle a little parmesan cheese if you like. Fin.

I know. I do my "french fries" like this now too. They are good just plain with olive oil and salt and pepper too. I don't think they are much more trouble either!


I just can't seem to get enough of these! I wish that fork rater would allow me to change my 4 to a five! These potatoes get better each time. Yummy

Alterations


I've increased the oil just a bit, added more parm (addict, what can I say?), and tried them with a cajun spice mix, hot hot hot. I find I like to cook them a little hotter (400) and let the bottoms crisp up with the tops staying moist and tender, the mix only being placed on top. Now you got me off and running! LOL I'm up to 4X's making them.
