    Leftover Halloween Candy Cookies

    I used leftover Mounds bars, Chocolate kisses, threw in a few raisins, and dried cranberries for good measure. The flavor of these cookies was great but I had a hard time getting them to shape correctly. My first batch did not spread and stayed as balls. I added extra baking powder for the second batch and that helped a bunch. Now let me add that there may have been three reasons for this. First, I am at a high altitude and second I subbed Splenda (sugar substitute) for most of the sugar. I have not baked with this before and don’t know if that would have been the problem. Finally, my baking soda is older than six months and that could have been the culprit. Again, the flavor was good and I’ll just have to learn more about baking influences.

    I remember that mine flattened out when baking, sometimes alot of butter will do that too. I know when I make them with margarine (if I don't have butter) they come out thicker and more cakelike. Thanks for trying them!!
