Morrocan Carrot Slaw

    This was spicy and delicious. I didn't have any currants so I used raisins and I soaked them ahead of time (mine were kind of dried out) and I didn't have cilantro so I used flat leaf parsley. I ate it the next day for lunch - wow the flavors were even more intense.
    This is a keeper and we will be using it often!
