Otterpond's Beets

    Had a few fresh beets and didn't know what exactly I should do with them so tried Laura's
    Roasted Beets Pickled With Vidalia Onion recipe. Beets are really a gorgeous vegetable and have such a neat earthy taste.
    I skipped the Splenda and I used fresh mint from my herb garden. It's a really pretty dish and all family members gave it a resounding thumbs up. Thanks Laura. Very nice!
