P-p-p-pineapple Raisin Cookies

I found this recipe by accident, as I do most recipes on this site. :) Anyway, I really liked these cookies - they had a cake-like texture and were moist and chewy. I think I will put both vanilla and rum extract in them next time; I think they would complement each other nicely. This is a good recipe and perfect if you want something different for a change.
