How to make it

  • Combine brown sugar, butter, egg, and your choice of extract in mixing bowl.
  • Beat until fluffy.
  • Add raisins, and pineapple; mix thoroughly.
  • Combine flour, baking powder, baking soda, and salt; add to the creamed mixture and mix well.
  • Stir in nuts.
  • Drop by spoonfuls 2 inches apart on greased cookie sheets.
  • Bake at 375 for 12 to 15 minutes.
  • Makes about 4 dozen cookies.
  • May dust with powdered sugar while still warm if desired.

    This is a novel recipe which I am going to save for the winter. I love the description of not being overly sweet, a bit of tartness would balance other cookies on a platter well.
