Salmon with an Almond Crust

    I usually only cook salmon the simple way - fillets, pan fried with a skoosh of lemon juice on - this recipe was my first foray into doing something a little more exciting with it!! I made this a few weeks ago and it worked really well. I would certainly make it again and recommend it to all. The only thing I had to change was not to do with the recipe, but with my health issues - (diabetes and lactose intolerant). So I used granary wholegrain breadcrumbs instead of white, and soy marge instead of butter (sob). I can only imagine how much better this would have tasted with the 'real' ingredients!!!
