SilverQueen's My Stuffed Cabbage Recipe

I made this today and it is just as wonderful as I thought it would be. High 5! I have added this to the "I Made it Group".

I took a couple of liberties. I didn't have any left over rice so I used Uncle Ben's Ready Rice Pilaf. There was this little bit of fresh spinach lingering so I chopped that real fine and put it in the mix. A ginger root left over was screaming to be added so I put that in too with this teeny tiny onion that felt left out. Then the garlic clove got jealous so I minced those up very fine and added. I can't actually imagine lamb without a bit of mint so a tbsp of dried mint jumped in with the other spices she suggested.

I have never made cabbage rolls before and I really wasn't sure how to handle the head of cabbage. I did use a different technique than she to get the leaves off which I wanted to share. This is not original with me, found it somewhere, but it sure cuts down on the prep time and works great.

    # -----------------
    # PREPARING THE CABBAGE LEAVES
    # Steam cabbage in microwave on high for 7-10 minutes or until peelable.
    # Bring to a boil, about 15 minutes to get the leaves loosened.
    # Drain and cool the cabbage completely.
    # Remove the hard outer vein from the leaves
    # -----------------

When I was reading other folks recipes I also found a suggestion that I used when preparing this. I sliced up the remaining inner cabbage head and used it to create a bed on the bottom of the crockpot. This will keep the rolls up off the bottom and made it easier to extract them from the cooking pot with out damaging the roll. The cabbage on the bottom is also all yummy from the tomato sauce and will make a great side dish for another dinner.

I love the nutritional facts that you add to each recipe you make! How do you do that?

Boy, Otter, you sure like playing with recipes! I just love all your additions: spinach, ginger, garlic, onion, mint! I bet that made those cabbage rolls even more special and delicious! I also love the idea of chopping up extra cabbage and placing it on the bottom, what a great idea!
And, just like Lillian, I am wondering, how DO you calculate those nutrition facts?
