    It's a good biscuit. Truth be told, I had to make them twice. The first time the rise was less than spectacular. Almost non existent. Did notice that the scraps rose better than the first time cut.
    With that in mind, the second batch was kneaded 8 to 10 times on a heavily floured work surface. Much much better rise. Almost 1".
    Biscuits are light, soft, and fluffy.
    Baked for 2 additional minutes with the convection fan going to aid in browning.
    Alton only gets 4 stars because the kneading instruction is missing.
