    This recipe will blow your skirt up over your head. Only criticism I have is there is too much flour mix for the breading. I even double coated and still had almost 3/4 cup left over even after I took out the 1/4 cup for the roux.
    Made an ad-hoc mashed potatoes for this dish; red potatoes, milk, butter, salt, pepper, smoked mozzarella and white sharp cheddar cheeses.
    The chicken I used slid out of its skin as I was cutting it up. Never had a bird do that before. So this one was skinless but still so very good. Thank you chefjeb.
