  This recipe is already in the reviews profile. I made it before we were linking to recipes. So here's the link.
  It's still good the original way but I made a couple of changes this time. Last time the casserole was a little slumpy on the plate for me. I upped the cracker amount and added an extra egg. It presents well on a plate now. Oh, I doubled the cheese. That left enough for a half cup to be sprinkled on top of the Ritz crackers.
  My pic turned out blurry but there is a nice one on the authors recipe page.

  Cycled through this recipe again due to the poliferiation of summer squash in my garden. Still tastes good with the extra egg and cheese and crackers. 8x8 dish fits nicely.
