Sparow64's Chicken Scallops

    I made Sparow64's Chicken Scallops Topped with Tomatoes, Olives and Feta last night for dinner and it was wonderful.

    Much to my chagrin when I got home after work and took the chicken from the refrigerator and then looked at the recipe, I realized that I was supposed to have marinated it all day and I hadn't. But I forged ahead and it probably got 15 minutes in the marinade while I was prepping the other ingredients. I just used green olives not Kalamata which would have been 'prettier' and I used all yellow cherry tomatoes fresh picked from the garden, and it would have looked really good if I'd used red and yellow. But none of those things affect the taste and the taste was really lovely. This is a really good summery chicken recipe. I also actually didn't have time to get the BBQ going so I just cooked them on the stove. Grilling would have been nicer I'm sure but despite all the things I 'didn't' do.......all family members gave it a thumbs up and a 'Please make again". I served this dish with fresh corn on the cob and a Quinoa salad. In hindsight I read Lori's suggestion to serve it with saffron rice and that would have been a great idea too. Loads of flavour in this.
    Pics below show my cherry tomatoes from the garden, the vegetarian version of the recipe I made for my son using Veggie Chicken Tenders and then of course, the actual recipe itself. Thanks Lori! It was excellent!
