    Spinach Casserole

    I made this last night. I mix a bit of fresh spinach in with the frozen. It need using. For mushrooms I had some fresh baby portabelos. I like those mushrooms because they are sturdier and have a solid flavor and texture.

    I mixed up the "cream sauce" as instructed. On tasting I found it a bit bland for my taste and adjusted it with a tablespoon of the warm spiced parsely ginger marinade I had in the refridgerator. I love that stuff. It still seemed a bit thin to me so I stirred in 1/2cup of parmesan cheese.

    I guess thats a long way of getting to, the recipe is a good basic spinach casserole base but I believe you need to be a bit creative to get the seasonings to your liking. As a base its pretty good. It is excellent on keeping the calories down as well. I would probably use a richer recipe for a special dinner as most folks like a cheesier casserole but us spinach purists will be quite content with this one.
