How to make it

  • Drain the cooked spinach.
  • Mix the remaining ingredients and pour into an ungreased casserole dish.
  • Cover and bake for 1 hour at 300 degrees.

    I made this last night. I mix a bit of fresh spinach in with the frozen. It need using. For mushrooms I had some fresh baby portabelos. I like those mushrooms because they are sturdier and have a solid flavor and texture.

    I mixed up the "cream sauce" as instructed. On tasting I found it a bit bland for my taste and adjusted it with a tablespoon of the warm spiced parsely ginger marinade I had in the refridgerator. I love that stuff. It still seemed a bit thin to me so I stirred in 1/4 cup of Parmesan cheese.

    The recipe is a good basic spinach casserole base. It is excellent on keeping the calories down as well. I would probably use a richer recipe for a special dinner as most folks like a cheesier casserole but us spinach purists will be quite content with this one.
