Thai seared shrimp with tomato by Gagagrits

    I tried this recipe because it had canned tomatoes added, which made it different from any Thai coconut curry I made before. Came out great, tomatoes added extra richness in flavor. Added a picture.

    Definitely, Lillian. I use just chicken breast all the time, comes out great! I usually throw in some veggies in mine - shredded carrots, bell pepper strips, julienned zucchini, etc. All you need is some curry paste and coconut milk. They sell both of those pretty cheap at the Asian markets. Make sure you only use 1, maximum 2 tbsp. of curry paste out of the can, otherwise it will be way too spicy. You can freeze the rest.

    Thanks...I'll have to try it! There's are really good Oriental grocery store about 2 miles from my home. They have all that stuff! I think I'll try it with the veggies and the Asian noodles also. And thanks for the tip on freezing the leftover curry paste! I'll probably have to freeze the leftover coconut milk too!

    I made this tonight and it was very good! I used chicken cutlets instead of shrimp. I only used 1 1/2 tsp of curry paste and it was just spicy enough. I also added carrots and red bell peppers when I sauteed the chicken. My husband is a big Thai food fan and he loved this! I sprinkled salt on my portion but my husband said his was fine without it. I'll be making this again in the near future. I added my photo to the collection.

    Thanks Juels! I froze the leftover coconut milk and curry paste...but I'll be using it again next time I make this recipe.

    Glad you gave it a try, Lillian! Thai food can be very quick and easy to prepare. It also has a lot of flavor. We have something Thai almost every week. The same could be said about Chinese and Indian cuisine. It's fun to experiment with other cultures!
