Ingredients
  • 1 Tbs. peanut oil
  • 1 lb uncooked deveined peeled medium wild USA shrimp
  • 1 cup sliced red onion
  • 1 to 2 tsps. green or red Thai curry paste
  • 1 can diced or fire roasted diced tomatoes, drained.
  • 1 Tbs. fresh lime juice
  • 2 tsp packed brown sugar
  • 1/2 cup coconut milk (not cream of coconut)
  • 1/4 cup chopped fresh Thai basil or basil leaves
  • Hot cooked rice, if desired

Directions
  1. In 10-inch skillet, heat oil over medium- high heat. Cook shrimp and onion in oil 2 minutes, stirring constantly. Stir in curry paste; cook 1 minute.
  2. Stir in tomatoes, lime juice and brown sugar. Heat to boiling. Reduce heat; simmer 1 minute. Stir in coconut milk and basil. Heat over low heat until hot.
  3. Serve over rice
  4. ENJOY

I love thai red curry so I will definitely have to make this. Thai is possibly one of my favorite foods, but I can never find anyone to eat it with me:( So I guess I'll have to learn to cook it myself! Thanks for the recipe!

Hi Gaga, made this one last night for dinner. This was a week for Gaga's recipes in my house! LOL. The recipe intrigued me because of the canned tomatoes added to the sauce. I never tried it that way before. Tasted delicious! The tomatoes gave it richness in flavor. I did add some veggies to mine, and an extra chicken breast I had left in the fridge. Everything else I followed by the recipe. Served it over the Asian noodles, instead of rice. Added my picture.


I made this tonight and it was very good! I used chicken cutlets instead of shrimp. I only used 1 1/2 tsp of curry paste and it was just spicy enough. I also added carrots and red bell peppers when I sauteed the chicken. My husband is a big Thai food fan and he loved this! I sprinkled salt on my portion but my husband said his was fine without it. I'll be making this again in the near future. I added my photo to the collection.
