The Best Zucchini Bread

    This was a pretty straight up recipe. Looked good, good flavor but on the dry side. I had a little trouble with doneness but I believe that was due to the high altitude here and had to bake for a longer time. Photo posted.

    Looks good! What I do when baked goods are too dry is to wrap it in plastic while its still slightly warm. That makes it nice and moist! I just did this a couple of days ago with a blueberry cake. It was my Mom's recipe, so I had to do something to save it! =)

    Looks good! Try wrapping in foil first while still warm, then once cool pop in a plastic bag for storage. (keep loaf wrapped in foil).
