Woolworths Cheesecake
This is wonderfully light and refreshing and SO easy to make. I made it two ways: as the cheesecake with a graham cracker crust AND as a lemony mousse in dessert cups. It freezes well, too. Just use foil mini loaf pans and wrap well. Perfect for quick dessert just sized right for two!

I don't know why it wouldn't - you could just crush a few extra graham crackers to garnish the top or not..it'd be good either way I'm sure! I was also wondering about using lime jello for a key-lime type cheesecake?
