    Yields 6 servings

    Ingredients
2 cups liquid egg whites (or about 16 separated egg whites)
    2 cups strawberries, sliced lengthwise
    1 cup granola
1/2 stick butter or 4 tbsp clarified butter or ghee
    3 tbsp light brown sugar
    1 tsp vanilla extract
    Salt to taste

    3 cups plain yogurt
    3 tbsp honey

Preheat oven to 350 degrees F.
Heat a medium-sized, nonstick, oven proof skillet over medium-high heat. Add butter and brown sugar, stirring until brown sugar is dissolved. Do not burn.
Add sliced strawberries and toss until well coated. Arrange strawberries in the bottom of the skillet. Sprinkle with half of the granola.
Whisk together egg whites and vanilla extract. Season with salt. Pour over strawberries and granola.
Bake egg mixture in skillet until eggs are puffy and the center is completely set--about 12 minutes depending on your oven.
Allow frittata to cool slightly and invert on a decorated plate. Garnish with remaining granola and serve with honey-sweetened yogurt.
