Pepper and Egg Sandwiches

  My grandmother and my father used to make sandwiches of sweet peppers and eggs on Italian/Ciabatta bread. I never see this listed as a sandwich anywhere. Is it a specifically Italian dish or just something my grandmother made up? I love these. Used to take them to school in my lunch box.

  My mom used to make me these sandwiches as well. My folks are from Abruzzi so maybe it's specific to that region. Another favorite was a eggs and sausage sandwich. I remember the oil would leak right through my paper lunch bag. All the kids knew who the Italian was at the table as they ate their egg salad sandwiches with mayo.
